This stew warms you from the inside out, making it an ideal choice for chilly nights or family gatherings. Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 cups fresh apple cider
  • 3 medium carrots, diced
  • 2 large Yukon Gold potatoes, cubed
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth (low-sodium preferred)
  • 2 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Prepare the ingredients by dicing the beef and chopping the vegetables into uniform pieces.
  2. In a large pot over medium heat, sauté onions and garlic in a splash of oil until fragrant (about 3-4 minutes).
  3. Increase heat to medium-high and brown the beef in batches for about 5-7 minutes.
  4. Pour in apple cider and beef broth, scraping up any browned bits from the pot. Add carrots, potatoes, thyme, bay leaves, salt, and pepper.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until the beef is fork-tender.
  6. Before serving, taste and adjust seasoning as needed; remove bay leaves.
