  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup apple cider
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs (room temperature)
  • 1 cup caramel sauce (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and a pinch of salt.
  3. In another bowl, beat softened butter with granulated and brown sugars until fluffy. Add eggs one at a time and mix in apple cider.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Scoop dough onto prepared sheets about 2 inches apart and bake for 10-12 minutes until lightly golden around the edges.
  6. Let cool briefly before transferring to wire racks. Once cooled, fill half of the cookies with caramel sauce and sandwich them with another cookie half.
