- 2 large eggs (room temperature)
- 1 cup caramel sauce (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and a pinch of salt.
- In another bowl, beat softened butter with granulated and brown sugars until fluffy. Add eggs one at a time and mix in apple cider.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Scoop dough onto prepared sheets about 2 inches apart and bake for 10-12 minutes until lightly golden around the edges.
- Let cool briefly before transferring to wire racks. Once cooled, fill half of the cookies with caramel sauce and sandwich them with another cookie half.
