  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1/4 cup Baileys Irish Cream
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk melted butter and granulated sugar until smooth. Add eggs one at a time, mixing well after each. Stir in cocoa powder and flour until just combined.
  3. Mix in Baileys until fully incorporated.
  4. In another bowl, beat softened cream cheese until smooth; gradually add powdered sugar, then stir in vanilla extract and remaining Baileys.
  5. Pour half of the brownie batter into the prepared pan, then dollop cheesecake mixture over it and swirl gently with a knife.
  6. Pour remaining brownie batter on top and bake for 30-35 minutes or until set but soft in the center. Let cool before slicing.
