  • 8 oz short pasta (e.g., fusilli or rotini)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 cup plain Greek yogurt
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine black beans, corn, cherry tomatoes, red onion, and cilantro.
  3. In a separate bowl, whisk together Greek yogurt, lime juice, olive oil, salt, and pepper.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over it. Toss gently to combine.
