Description

  • 1 medium red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 12 small flour tortillas

Instructions

  1. Preheat oven to 375°F (190°C). Cut flour tortillas into circles and press into muffin tins to form cups. Bake for 10-12 minutes until golden brown.
  2. In a large bowl, combine rinsed black beans, diced red bell pepper, halved cherry tomatoes, and red onion. Mix gently.
  3. Add chopped cilantro and lime juice; season with salt and pepper. Stir to combine.
  4. Once tortilla cups have cooled slightly, spoon the mixture into each cup until full.
  5. Garnish with crumbled feta cheese or avocado slices if desired. Serve immediately or chill before serving.
