  • 3 lbs short ribs
  • 2 large onions, chopped
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 cup good quality red wine
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Sear short ribs on all sides until browned (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, sauté onions for about 5 minutes until soft. Add minced garlic and cook for another minute.
  4. Stir in carrots and celery; cook for an additional five minutes. Pour in red wine, scraping up browned bits from the bottom. Simmer for about 10 minutes until reduced slightly.
  5. Return short ribs to the pot; add beef broth, thyme, and rosemary until submerged.
  6. Cover and braise in the oven for about three hours or until fork-tender.
