  • 2 cups butternut squash (peeled and diced)
  • 8 oz fettuccine or penne pasta
  • 1/4 cup fresh sage (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced butternut squash in olive oil, salt, and pepper. Spread on a baking sheet.
  2. Roast squash for 25-30 minutes until tender and caramelized.
  3. Cook pasta in salted boiling water until al dente. Reserve some pasta water before draining.
  4. In a skillet, heat olive oil over medium heat, sauté garlic until fragrant. Add heavy cream and simmer.
  5. Stir in roasted squash, then add cooked pasta, Parmesan cheese, and chopped sage. Mix well.
  6. Serve immediately with extra sage and Parmesan as garnish.
