  • 1 medium spaghetti squash
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup breadcrumbs
  • 2 tbsp unsalted butter (for sauce)
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Place the squash cut-side down on a lined baking sheet and roast for 30-40 minutes until tender.
  3. In a bowl, mix heavy cream, garlic powder, salt, pepper, and half of the shredded cheddar and mozzarella until smooth.
  4. Once roasted, shred the spaghetti squash strands with a fork and combine them with the creamy mixture.
  5. Transfer to a greased baking dish, top with remaining cheese and breadcrumbs.
  6. Bake for an additional 20-25 minutes until bubbly and golden brown.
