  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1 cup low-sodium chicken broth
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 1/2 cup shredded sharp cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and sear chicken until golden brown (about 5 minutes per side). Remove the chicken from the skillet.
  2. In the same skillet, sauté minced garlic for one minute. Add soy sauce and chicken broth; scrape up any browned bits. Return chicken to the skillet, cover, and let simmer on low for about 20 minutes.
  3. While the chicken simmers, boil cubed potatoes in salted water until fork-tender (15-20 minutes). Drain and mash with heavy cream, cheddar cheese, salt, and pepper until smooth.
  4. Serve cheesy mashed potatoes topped with slices of chicken and drizzled with garlic gravy.
