  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 ripe avocados
  • 4 large flour tortillas
  • 2 cups mixed greens (spinach and arugula)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken with salt and pepper. Cook for 6-7 minutes per side until fully cooked. Let rest before slicing into strips.
  2. In a bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Slice avocados in half, remove the pit, and mash lightly in a bowl.
  4. Lay down mixed greens on each tortilla, add sliced chicken, mashed avocado, and drizzle with the sauce.
  5. Fold in the sides of the tortilla and roll tightly to form wraps.
  6. Slice each wrap diagonally and serve with extra lemon wedges or chips.
