  • 1 tsp cumin
  • 1 cup brown rice
  • Salt and pepper to taste
  • 1 cup black beans (canned or cooked)
  • 1 cup corn salsa
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • ½ cup sour cream or Greek yogurt
  • Juice of 1 lime

Instructions

  1. Preheat oven to 400°F (200°C) or heat a grill pan over medium-high heat.
  2. In a bowl, marinate chicken with olive oil, minced garlic, chipotle powder, cumin, salt, and pepper for at least 30 minutes.
  3. Rinse brown rice under cold water; cook with two cups of water until tender (about 45 minutes).
  4. Sear marinated chicken in a skillet for about 6-7 minutes on each side until golden and cooked through.
  5. Assemble your bowl by layering rice, sliced chicken, black beans, corn salsa, diced tomatoes, cheese, and avocado.
