  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 6 oz dark chocolate (high-quality)
  • 1/2 cup brewed espresso
  • 2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1/4 cup brewed coffee

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two baking pans and line with parchment paper.
  2. In a bowl, combine almond flour and granulated sugar. Add eggs one at a time, mixing until fluffy. Fold in melted butter until combined.
  3. Divide the batter evenly between the prepared pans and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  4. For the ganache, heat heavy cream until simmering, then pour over chopped dark chocolate; stir until smooth.
  5. For the buttercream, beat softened butter until creamy; gradually mix in powdered sugar and cocoa powder, then add brewed coffee until fluffy.
  6. Once cakes are cooled, layer them alternately with ganache and buttercream, finishing with ganache on top.
