  • 1 lb ground meat (beef, pork, or turkey)
  • 1 cup full-fat coconut milk
  • 2 tbsp curry paste (red or yellow)
  • 1 tbsp grated fresh ginger
  • 3 cloves garlic, minced
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. In a large bowl, mix ground meat with ginger, garlic, salt, and pepper until well combined.
  2. Form the mixture into 1-inch meatballs and place them on a lined baking sheet.
  3. Heat oil in a skillet over medium-high heat; sear meatballs until browned on all sides (about 5 minutes).
  4. Add coconut milk and curry paste to the skillet; stir until bubbling.
  5. Return meatballs to the skillet; simmer on low for 15 minutes until fully cooked.
  6. Stir in cilantro and lime juice before serving.
