Description

Ingredients

  • 4 pork sausages (about 400g)
  • 4 strips thick-cut bacon (about 200g)
  • 2 medium yellow onions, sliced
  • 3 medium Russet potatoes, diced (about 600g)
  • 2 large carrots, sliced
  • 4 cups chicken broth (960ml)
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables and slice sausages and bacon into bite-sized pieces.
  2. In a large pot over medium heat, cook bacon until crispy. Add sausages and sauté until browned.
  3. Stir in onions and carrots; cook until onions are translucent (5-7 minutes).
  4. Add potatoes and pour in chicken broth to cover ingredients. Bring to a boil.
  5. Add thyme, bay leaves, salt, and pepper. Reduce heat to low, cover, and simmer for about 30 minutes or until potatoes are fork-tender.
  6. Serve hot with crusty bread.
