- 4 pork sausages (about 400g)
- 4 strips thick-cut bacon (about 200g)
- 2 medium yellow onions, sliced
- 3 medium Russet potatoes, diced (about 600g)
- 2 large carrots, sliced
- 4 cups chicken broth (960ml)
- 1 tsp dried thyme (or 1 tbsp fresh)
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Chop all vegetables and slice sausages and bacon into bite-sized pieces.
- In a large pot over medium heat, cook bacon until crispy. Add sausages and sauté until browned.
- Stir in onions and carrots; cook until onions are translucent (5-7 minutes).
- Add potatoes and pour in chicken broth to cover ingredients. Bring to a boil.
- Add thyme, bay leaves, salt, and pepper. Reduce heat to low, cover, and simmer for about 30 minutes or until potatoes are fork-tender.
