  • 1 cup canned black beans (rinsed)
  • 1 cup cherry tomatoes (halved)
  • 1 cup bell peppers (diced, mixed colors)
  • 1/2 cup red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup lime juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. 1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water until cool.
