  • 2 lbs Yukon Gold potatoes
  • 1 cup plain full-fat Greek yogurt
  • 1/4 cup fresh dill, chopped
  • 1/2 cup red onion, diced
  • 1 cup cucumber, diced
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender (15-20 minutes). Drain and cool slightly.
  2. Transfer cooled potatoes to a large bowl and chill in the fridge for 10 minutes.
