Ingredients
- 2 medium sweet potatoes
- 2 cups fresh baby spinach
- 1 cup cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1 small yellow onion, chopped
- 4 oz cream cheese (full-fat or low-fat)
- 1 cup shredded cheddar cheese
- 2 tsp olive oil
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wash sweet potatoes and poke holes with a fork. Place on a lined baking sheet.
- Bake sweet potatoes for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
- Stir in sliced mushrooms; cook until browned (approximately 8 minutes). Add spinach and cook until wilted (about 2-3 minutes).
- Reduce heat to low; mix in cream cheese until smooth. Stir in cheddar cheese along with salt and pepper.
- Once sweet potatoes are cooked, slice open lengthwise and fluff insides with a fork. Spoon filling into each potato half and return to the oven for another 10-15 minutes.
