- Salt & pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Slice the tops off two heads of garlic, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until golden and soft.
- In a large pot over medium heat, melt butter. Add chopped onion and sauté for about 5 minutes until translucent.
- Add diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
- Squeeze roasted garlic cloves into the pot. Use an immersion blender to blend until smooth or transfer to a regular blender in batches.
- Stir in heavy cream gradually while heating on low. Season with salt and pepper to taste.
