  • 2 medium Russet potatoes (about 1 lb), diced
  • 1 head of roasted garlic (from 2 heads)
  • 1 medium yellow onion, chopped
  • 3 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tbsp butter
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the tops off two heads of garlic, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes until golden and soft.
  2. In a large pot over medium heat, melt butter. Add chopped onion and sauté for about 5 minutes until translucent.
  3. Add diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
  4. Squeeze roasted garlic cloves into the pot. Use an immersion blender to blend until smooth or transfer to a regular blender in batches.
  5. Stir in heavy cream gradually while heating on low. Season with salt and pepper to taste.
