  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (13.5 oz) full-fat coconut milk, unsweetened
  • 1/4 cup tikka masala spice blend
  • 1 thumb-sized piece fresh ginger, grated
  • 4 garlic cloves, minced
  • 1 large onion, finely chopped
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 2 tbsp lemon juice
  • 1 cup tomato puree
  • Salt and pepper to taste
  • Pinch of sugar (optional)

Instructions

  1. 1. Prepare your ingredients: Finely chop the onion and mince the garlic and ginger.
  2. 2. Sear the chicken in a skillet over medium heat until golden brown on both sides (optional).
  3. 3. Place the seared chicken in the crockpot. Add tomato puree, coconut milk, onion, garlic, ginger, lemon juice, salt, pepper, sugar (if using), and tikka masala spice blend.
  4. 4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
