  • 8 oz rotini pasta
  • 1 large English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the cucumber and cherry tomatoes, and slice the red onion and herbs.
  3. In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  4. In a large bowl, combine cooled pasta with cucumbers, tomatoes, onion, and herbs. Pour dressing over and toss gently.
  5. Chill in the refrigerator for at least 30 minutes before serving.
