- 8 oz rotini pasta
- 1 large English cucumber, diced
- 1 cup cherry tomatoes, halved

- 2 tbsp apple cider vinegar

Instructions
- Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
- While the pasta cools, chop the cucumber and cherry tomatoes, and slice the red onion and herbs.
- In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
