Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish with coconut oil.
  2. In a medium bowl, mix almond flour and a pinch of salt.
  3. In another bowl, combine melted coconut oil and maple syrup; pour into dry ingredients and blend until crumbly.
  4. Press the mixture into the baking dish and bake for 10-12 minutes until golden.
  5. While the crust bakes, whisk together eggs, lemon juice, zest, and remaining maple syrup until smooth.
  6. Pour filling over the baked crust and return to the oven for an additional 15-20 minutes until set but slightly jiggly in the center.
  7. Allow to cool before slicing into squares.
