  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 1 tsp cayenne pepper (adjust to taste)
  • 1 tsp fresh thyme leaves
  • 1 cup heavy cream
  • 2 tbsp olive oil (for sautéing)
  • Salt and pepper to taste
  • Cooked rice or biscuits (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion, bell pepper, celery, and minced garlic. Sauté until softened (about 5 minutes).
  2. Add sliced Andouille sausage to the skillet. Cook until browned (7-10 minutes).
  3. Stir in cayenne pepper and thyme. Pour in chicken broth while scraping the bottom of the pan. Simmer for about 10 minutes.
  4. Lower heat and stir in heavy cream until well combined. Simmer for another 5-7 minutes until slightly thickened.
  5. Serve over cooked rice or biscuits and garnish with fresh parsley if desired.
