Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt; set aside.
  3. In a mixing bowl, cream together softened butter and brown sugar until light and fluffy (about three minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until just combined; stir in coffee powder.
  6. Drop tablespoon-sized balls onto prepared sheets, spaced two inches apart.
  7. Bake for 10-12 minutes until golden around edges but soft in center. Allow to cool on sheets before transferring to plates.
