- In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt; set aside.
- In a mixing bowl, cream together softened butter and brown sugar until light and fluffy (about three minutes).
- Beat in the egg and vanilla extract until well combined.
- Gradually mix in the dry ingredients until just combined; stir in coffee powder.
- Drop tablespoon-sized balls onto prepared sheets, spaced two inches apart.
- Bake for 10-12 minutes until golden around edges but soft in center. Allow to cool on sheets before transferring to plates.
