  • 8 oz rotini pasta
  • 2 cups fresh sweet corn (about 3 ears)
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse with cold water.
  2. Preheat the grill to medium heat. Grill corn for about 10 minutes until charred; let cool before slicing off kernels.
  3. In a large bowl, combine diced avocados, cherry tomatoes, red onion, and grilled corn.
  4. Squeeze lime juice over the mixture and drizzle with olive oil. Season with salt and pepper.
  5. Toss gently to combine without mashing the avocados.
  6. Garnish with chopped cilantro before serving. Chill for at least 30 minutes for best flavor.
