Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 1 ripe avocado (diced)
  • 2 ears fresh corn (kernels removed) or 1 cup frozen corn
  • 2 tbsp freshly squeezed lime juice
  • ¼ cup chopped fresh cilantro
  • ½ cup Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse shrimp under cold water; pat dry.
  2. In a bowl, combine olive oil, garlic powder, chili powder, salt, and pepper. Add shrimp; toss to coat.
  3. Preheat grill to medium-high heat. Grill shrimp for 3-4 minutes per side until pink and opaque.
  4. Meanwhile, mix corn kernels, diced avocado, cilantro, lime juice, salt, and pepper in a bowl for corn salsa.
  5. In another bowl, combine Greek yogurt with lime juice; season.
  6. To assemble: layer corn salsa in a bowl or plate, top with grilled shrimp, drizzle creamy sauce over it.
