Instructions
- Wash and chop zucchini into half-moons; peel and dice sweet potatoes into small cubes.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook until fragrant and translucent.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).
- Stir in diced sweet potatoes along with salt, pepper, paprika, and oregano. Cook for about 10 minutes until they begin to soften.
- Add zucchini slices to the skillet; stir gently. Cook for another 5-7 minutes until tender yet slightly crisp.
