  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup fresh parsley, chopped
  • 2 medium carrots, sliced
  • 2 medium Yukon Gold potatoes, diced
  • 4 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, parsley, salt, and pepper; mix gently to avoid overmixing.
  2. Roll into golf ball-sized meatballs and brown in olive oil over medium heat until golden; remove and set aside.
  3. In the same pot, sauté onions and garlic until fragrant.
  4. Add beef broth and diced tomatoes along with carrots and potatoes; bring to a gentle boil.
  5. Return meatballs to the pot and reduce heat; simmer for about an hour.
