Description

High Protein Instant Pot Chicken & Rice Soup is a comforting, hearty meal that comes together in less than an hour. With tender chicken, fluffy rice, and vibrant vegetables simmered in a rich broth, this dish is perfect for busy weeknights or chilly evenings.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 1 cup long grain white rice
  • 2 medium carrots, chopped
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • Juice of 1 lemon (optional)

Instructions

  1. Set your Instant Pot to sauté mode and heat the olive oil. Sauté minced garlic until fragrant (about 1 minute).
  2. Add chopped carrots and diced celery; cook for about 3 minutes until slightly softened.
  3. Stir in chicken breasts, followed by rice and chicken broth. Ensure all ingredients are well combined.
  4. Sprinkle with thyme and black pepper. If using lemon juice, reserve it for later.
  5. Close the lid securely and set to high pressure for 10 minutes. Allow natural pressure release for 10 minutes before quick releasing any remaining pressure.
  6. Serve hot, garnished with additional thyme or a splash of lemon juice if desired.
