- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 1 cup long grain white rice
- 2 medium carrots, chopped
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1 tbsp olive oil
- Juice of 1 lemon (optional)
Instructions
- Set your Instant Pot to sauté mode and heat the olive oil. Sauté minced garlic until fragrant (about 1 minute).
- Add chopped carrots and diced celery; cook for about 3 minutes until slightly softened.
- Stir in chicken breasts, followed by rice and chicken broth. Ensure all ingredients are well combined.
- Sprinkle with thyme and black pepper. If using lemon juice, reserve it for later.
- Close the lid securely and set to high pressure for 10 minutes. Allow natural pressure release for 10 minutes before quick releasing any remaining pressure.
- Serve hot, garnished with additional thyme or a splash of lemon juice if desired.
