Ingredients

  • 2 lbs starchy potatoes (e.g., Russets)
  • ½ head green cabbage, finely chopped
  • 4 tbsp unsalted butter
  • ½ cup whole milk or heavy cream
  • 4 scallions, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into even chunks. Boil in salted water until fork-tender (15-20 minutes). Drain.
  2. In a skillet, melt 4 tbsp butter over medium heat. Sauté the cabbage and scallions until softened (about 5 minutes).
  3. Return drained potatoes to the pot. Mix in sautéed cabbage mixture, milk/cream, and remaining butter. Mash until smooth.
  4. Season with salt and pepper to taste.
  5. Serve warm, garnished with extra scallions or melted butter.
