  • 1 cup granulated sugar (divided)
  • 3 egg whites
  • 1 cup all-purpose flour
  • ½ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. For the crust, mix softened butter, granulated sugar, flour, and salt until crumbly. Press into the pan and bake for 15-20 minutes until golden.
  3. While cooling, mash raspberries with ½ cup granulated sugar and lemon juice.
  4. In a separate bowl, whip egg whites until soft peaks form; gradually add powdered sugar until stiff peaks form.
  5. Spread raspberry mixture over the cooled crust and top with meringue. Bake for another 20-25 minutes until meringue is set and lightly golden.
