  • 3 cloves fresh garlic, minced
  • 2 medium carrots, sliced thinly
  • 1 medium onion, diced
  • 3 tbsp curry powder
  • 1/4 cup low-sodium soy sauce
  • 1 can (13.5 oz) full-fat coconut milk

Instructions

  1. Prepare your ingredients by dicing chicken into bite-sized pieces and chopping the onions and carrots.
