- 1 lb fresh lobster meat
- 1 package (14 oz) puff pastry
- 1 cup heavy cream
- 1 cup diced carrots
- 1 cup frozen peas
- 1 cup diced onions
- 4 tbsp butter
- 2 cups chicken or seafood stock
- 2 tbsp lemon juice
- 1 tsp fresh thyme, chopped
- 1 tsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- If using whole lobsters, steam them until cooked through and cool before removing the meat from the shell.
- In a large skillet over medium heat, melt the butter. Add onions, carrots, and peas; sauté for about 5 minutes until softened.
- Stir in flour to create a roux; cook until golden brown. Gradually whisk in stock and heavy cream; simmer until thickened.
- Gently fold in lobster meat, lemon juice, thyme, parsley, salt, and pepper; let simmer briefly.
- Pour the lobster mixture into a baking dish lined with one sheet of puff pastry. Cover with another pastry sheet; seal edges well.
- Bake for 25–30 minutes or until the crust is golden brown and filling is bubbly.
