  • 1 lb fresh lobster meat
  • 1 package (14 oz) puff pastry
  • 1 cup heavy cream
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 cup diced onions
  • 4 tbsp butter
  • 2 cups chicken or seafood stock
  • 2 tbsp lemon juice
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. If using whole lobsters, steam them until cooked through and cool before removing the meat from the shell.
  3. In a large skillet over medium heat, melt the butter. Add onions, carrots, and peas; sauté for about 5 minutes until softened.
  4. Stir in flour to create a roux; cook until golden brown. Gradually whisk in stock and heavy cream; simmer until thickened.
  5. Gently fold in lobster meat, lemon juice, thyme, parsley, salt, and pepper; let simmer briefly.
  6. Pour the lobster mixture into a baking dish lined with one sheet of puff pastry. Cover with another pastry sheet; seal edges well.
  7. Bake for 25–30 minutes or until the crust is golden brown and filling is bubbly.
