- 2 ripe mangoes (peeled and diced)
- 1/2 cup sago pearls
- 1 can (13.5 oz) full-fat coconut milk
- 2 cups water (for boiling sago)
- 3 tablespoons sugar (adjust to taste)
- 2 pandan leaves (optional)
Instructions
- Boil water in a pot. Add sago pearls and stir occasionally until they turn translucent, about 10-15 minutes.
- Drain the cooked sago pearls using a fine sieve and rinse under cold water.
- In another pot, heat coconut milk with sugar over low heat until sugar dissolves completely.
- Gently fold the drained sago pearls into the coconut milk mixture, cooking for an additional 5 minutes while stirring gently.
- While the mixture cools slightly, chop the diced mangoes.
- In serving bowls, layer mango cubes at the bottom and pour over the creamy sago mixture. Serve chilled.
