  • 2 ripe mangoes (peeled and diced)
  • 1/2 cup sago pearls
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups water (for boiling sago)
  • 3 tablespoons sugar (adjust to taste)
  • 2 pandan leaves (optional)

Instructions

  1. Boil water in a pot. Add sago pearls and stir occasionally until they turn translucent, about 10-15 minutes.
  2. Drain the cooked sago pearls using a fine sieve and rinse under cold water.
  3. In another pot, heat coconut milk with sugar over low heat until sugar dissolves completely.
  4. Gently fold the drained sago pearls into the coconut milk mixture, cooking for an additional 5 minutes while stirring gently.
  5. While the mixture cools slightly, chop the diced mangoes.
  6. In serving bowls, layer mango cubes at the bottom and pour over the creamy sago mixture. Serve chilled.
