  • 4 tbsp melted butter

Instructions

  2. If using fresh potatoes, peel and boil them until tender (about 15-20 minutes). Drain and mash until smooth.
  3. While still warm, mix in the cheddar cheese until melted slightly.
  4. In a separate bowl, whisk together eggs and melted butter. Combine with the potato mixture.
  5. Gradually stir in flour, baking powder, salt, and pepper until you have a thick yet scoopable dough.
  6. Using a spoon or cookie scoop, form small balls and place them on the prepared baking sheet with space in between.
  7. Bake for 20-25 minutes or until golden brown on top.
