Ingredients

  • 2 cups mixed greens (spinach or arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced (English cucumber preferred)
  • 1 cup bell peppers, diced (any color)
  • 1 cup cooked protein (chicken, beans, or tofu)
  • ¼ cup dressing (vinaigrette)
  • ¼ cup olive oil
  • 2 tbsp vinegar
  • salt
  • pepper

Instructions

  1. Prepare 4-5 clean and dry mason jars.
  2. In a bowl, whisk together ¼ cup olive oil, 2 tbsp vinegar, salt, and pepper to make the dressing.
  3. Start layering ingredients in each jar: add protein at the bottom followed by cucumbers and bell peppers.
  4. Next, layer in cherry tomatoes and finish with mixed greens on top.
  5. Seal the jars tightly and store them in the fridge for up to five days. Shake before serving.
