- 2 cups all-purpose flour
- 1/2 cup unsalted butter (cold)
- 1 packet active dry yeast (2 1/4 tsp)
- 3/4 cup warm milk
- 2 tbsp sugar
- 1 tsp salt
- 2 tbsp matcha powder
- 1/4 cup sliced almonds (toasted)
- 1 egg + 1 tbsp milk (for egg wash)
Instructions
- In a large mixing bowl, combine flour, sugar, salt, and yeast. Add warm milk and mix until a rough dough forms. Knead for about 5 minutes until smooth.
- Roll cold butter into thin sheets between parchment paper, then encase it in the dough by folding it over completely.
- Roll the dough into a rectangle about 1/4 inch thick and fold it into thirds like a letter to create layers.
- Mix matcha powder with a little water to form a paste and spread it over half of the folded dough before folding again and rolling out once more.
- Cut triangles from the rolled dough and place sliced almonds at the base before rolling them tightly towards the tip to shape the croissants.
- Preheat oven to 375°F (190°C). Brush croissants with egg wash and bake for about 20-25 minutes until golden brown.
