- 1 lb Brussels sprouts, halved
- 1 cup sweet corn (fresh, frozen, or canned)
- 2 tbsp smoked paprika
- 2 tbsp lime juice (freshly squeezed)
- 3 tbsp mayonnaise (or Greek yogurt)
- 1/2 cup cotija cheese (crumbled; feta works as a substitute)
- 1/4 cup fresh cilantro (chopped)
- 1 tsp chili powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Trim the Brussels sprouts and halve them for even cooking.
- In a bowl, toss the Brussels sprouts with olive oil, smoked paprika, salt, and pepper until well coated.
- Spread the sprouts on a baking sheet and scatter the sweet corn on top. Roast for 20-25 minutes until golden brown.
- In another bowl, mix mayonnaise (or yogurt), lime juice, chili powder, and half of the cotija cheese until creamy.
- Once the Brussels sprouts are done roasting, combine them with the creamy dressing and mix well.
- Serve warm, garnished with remaining cotija cheese and cilantro.
