  • 1 small onion, finely grated
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Pita bread or skewers for serving
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp dill

Instructions

  1. In a large bowl, combine ground beef, grated onion, minced garlic, parsley, cumin, smoked paprika, salt, and pepper. Mix gently until combined.
  2. Shape the mixture into long oval kebabs on skewers or freeform.
  3. Chill the formed kebabs in the refrigerator for at least 30 minutes.
  4. Preheat your grill over medium-high heat and brush skewers lightly with oil.
  5. Grill kebabs for about 8-10 minutes per side until browned and cooked through (internal temperature of 160°F).
  6. For the tzatziki sauce: mix Greek yogurt, grated cucumber (squeezed dry), minced garlic, lemon juice, dill, salt, and pepper in a bowl; chill until serving.
