- 1 sheet puff pastry (thawed)
- 1 cup finely chopped cremini or button mushrooms
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- 2 tablespoons Dijon mustard
- 1 egg (for egg wash)
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Season the beef with salt and pepper. In a skillet over high heat, add olive oil and sear the beef for about 2 minutes on each side until browned. Remove from heat and let it rest.
- In the same skillet, sauté chopped mushrooms over medium heat for about 5 minutes until tender. Stir in thyme, season with salt and pepper, and let cool slightly.
- Roll out puff pastry on a floured surface to about ¼ inch thick. Cut into squares large enough to wrap around the beef.
- Spread a thin layer of Dijon mustard over each piece of beef, top with mushroom mixture, then wrap in pastry squares.
- Place wrapped bites on the baking sheet, brush with egg wash, and bake for 20–25 minutes until golden brown.
