  • 4 cups butternut squash, peeled and cubed
  • 1 pound Italian sausage (sweet or spicy)
  • 1 tablespoon fresh sage leaves, chopped (plus more for garnish)
  • 1 cup whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Peel and cube butternut squash.
  2. In a skillet, heat olive oil over medium heat. Add sausage and cook until browned, about 5-7 minutes.
  3. Stir in the cubed butternut squash and sauté until tender, about 10-15 minutes.
  4. In a bowl, mix ricotta cheese with salt, pepper, and half of the chopped sage.
  5. In a baking dish, layer the sausage mixture, ricotta blend, and mozzarella cheese. Repeat until ingredients are used up.
  6. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15-20 minutes until bubbly.
