  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 16 oz store-bought gnocchi
  • 2 tbsp olive oil
  • 3 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tbsp lemon juice

Instructions

  1. Preheat a large skillet over medium heat and add olive oil to coat the bottom.
  2. Season chicken breasts with salt and pepper; sear for about 6 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.
  3. In the same skillet, add minced garlic; sauté for about one minute until fragrant. Then, add gnocchi and cook until they start to crisp.
  4. Pour in chicken broth and lemon juice; bring to a simmer, scraping any bits from the bottom of the pan.
  5. Add fresh spinach and stir until wilted (about 2 minutes).
  6. Slice rested chicken and return it to the skillet with grated Parmesan cheese. Allow everything to meld together for another couple of minutes before serving.
