- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 16 oz store-bought gnocchi
- 2 tbsp olive oil
- 3 cups fresh spinach
- ½ cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tbsp lemon juice
Instructions
- Preheat a large skillet over medium heat and add olive oil to coat the bottom.
- Season chicken breasts with salt and pepper; sear for about 6 minutes on each side until golden brown and cooked through. Remove from the skillet and let rest.
- In the same skillet, add minced garlic; sauté for about one minute until fragrant. Then, add gnocchi and cook until they start to crisp.
- Pour in chicken broth and lemon juice; bring to a simmer, scraping any bits from the bottom of the pan.
- Add fresh spinach and stir until wilted (about 2 minutes).
- Slice rested chicken and return it to the skillet with grated Parmesan cheese. Allow everything to meld together for another couple of minutes before serving.
