  • 2 large eggs

  • Zest of 2 oranges + 1/2 cup fresh orange juice
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs, milk, melted butter, orange zest, and juice until smooth.
  4. Gently fold wet ingredients into dry mixture until just combined.
  5. Spoon batter into muffin cups about three-quarters full.
  6. Bake for 18-20 minutes until golden brown; a toothpick should come out clean.
  7. Cool in the pan for 5 minutes before transferring to a wire rack.
