  • 1 cup creamy peanut butter
  • ½ cup honey or maple syrup
  • 2 cups rolled oats
  • ½ cup dark or semi-sweet chocolate chips
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. Rinse quinoa under cold water and cook according to package instructions until fluffy.
  3. In a large bowl, mix peanut butter, honey or maple syrup, and vanilla extract until smooth.
