- 2 tbsp olive oil
- 4 cloves garlic, minced
- 28 oz crushed tomatoes (preferably San Marzano)
- ½ cup vodka
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Boil a large pot of salted water and cook penne pasta according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
- Stir in crushed tomatoes and simmer for 5 minutes until slightly thickened.
- Add vodka to the skillet and simmer for another 2 minutes to let the alcohol evaporate.
- Reduce heat, stir in heavy cream, and let simmer for an additional 5 minutes.
- Combine the cooked penne with the sauce, tossing to coat evenly. Mix in Parmesan cheese before serving, garnished with fresh basil.
