  • 34 lbs beef chuck roast
  • 4 carrots, chopped
  • 4 medium potatoes (Russet or Yukon Gold), quartered
  • 1 large yellow onion, diced
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the vegetables: slice the carrots, quarter the potatoes, dice the onion, and mince the garlic.
  2. Sear the beef chuck roast in a skillet over medium-high heat with a bit of oil until browned on all sides (about 4-5 minutes per side). Transfer it to your slow cooker.
  3. Layer the chopped vegetables around the roast in the slow cooker.
  4. Pour in enough beef broth to cover half of the roast and add Worcestershire sauce, thyme, rosemary, salt, and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours until tender.
  6. Remove from slow cooker, slice or shred the meat, and serve with vegetables and gravy.
