- 4 carrots, chopped
- 4 medium potatoes (Russet or Yukon Gold), quartered

- 2 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the vegetables: slice the carrots, quarter the potatoes, dice the onion, and mince the garlic.
- Sear the beef chuck roast in a skillet over medium-high heat with a bit of oil until browned on all sides (about 4-5 minutes per side). Transfer it to your slow cooker.
- Layer the chopped vegetables around the roast in the slow cooker.
- Pour in enough beef broth to cover half of the roast and add Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours until tender.
