  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz Philadelphia cream cheese, softened
  • ½ cup sour cream
  • 2 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press firmly into the bottom of the prepared pan to form the crust.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, sour cream, and vanilla; mix until creamy.
  4. Add eggs one at a time, mixing gently to avoid overmixing. Pour cheesecake filling over crust and smooth the top.
  5. Bake for 30-35 minutes until set but slightly jiggly in the center. Cool at room temperature, then refrigerate for at least four hours before serving.
