Philly Cheesesteak Quesadillas are a delicious twist on the classic cheesesteak, featuring gooey provolone cheese, tender ribeye steak, and caramelized onions and peppers enveloped in a crispy tortilla. Perfect for cozy nights or entertaining guests, these quesadillas are easy to make and always a crowd-pleaser. Delight in the savory flavors with every bite!

Ingredients

Scale
  • 4 large flour tortillas
  • 8 oz thinly sliced ribeye steak
  • 1 medium onion, sliced
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup provolone cheese, shredded
  • 2 tsp olive oil

Instructions

  1. Sauté the onion and bell peppers in a skillet with olive oil over medium heat until soft and caramelized (about 5-7 minutes). Remove and set aside.
  2. In the same skillet, cook the ribeye steak until browned (approximately 3-4 minutes).
  3. Assemble each quesadilla by layering sautéed vegetables, ribeye slices, and provolone on half of a tortilla. Fold it over.
  4. Grill each quesadilla in the skillet until both sides are golden brown and the cheese has melted (around 3-4 minutes per side).
  5. Slice into wedges and serve hot with your favorite dipping sauces.
