Description

These Pumpkin Crunch Parfaits are the ultimate fall-inspired treat, layering creamy pumpkin mousse with crunchy spiced pecan granola and a touch of whipped cream. They’re easy to assemble, visually stunning, and packed with cozy flavors—perfect for Thanksgiving, holiday gatherings, or whenever you’re in the mood for a no-bake dessert that tastes like autumn in a cup.

Ingredients

Scale

For the pumpkin mousse:

  • 1 cup canned pure pumpkin puree
  • 3/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves (optional)
  • 1/2 teaspoon pure vanilla extract

For the crunch layer:

  • 1 cup granola (preferably with pecans or cinnamon flavor)
  • 1/4 cup chopped toasted pecans
  • 1 tablespoon brown sugar (optional for extra sweetness)

For topping:

  • Whipped cream
  • Crushed graham crackers or extra granola (optional)
  • Caramel drizzle (optional)

Instructions

  1. Prepare the pumpkin mousse:
    • In a mixing bowl, beat heavy cream with powdered sugar until soft peaks form.
    • In a separate bowl, combine pumpkin puree, cinnamon, nutmeg, ginger, cloves, and vanilla.
    • Gently fold the whipped cream into the pumpkin mixture until fully combined and smooth. Refrigerate while preparing the crunch.
  2. Prepare the crunch layer:
    • In a small bowl, mix granola, toasted pecans, and brown sugar if using. Set aside.
  3. Assemble the parfaits:
    • In small glasses or jars, layer a spoonful of pumpkin mousse, followed by a layer of crunch.
    • Repeat layers until glasses are filled, finishing with mousse on top.
  4. Garnish and serve:
    • Top with whipped cream, a sprinkle of crushed graham crackers or extra granola, and a drizzle of caramel if desired.
    • Serve immediately or chill for up to 2 hours before serving.

Notes

  • For extra flavor, mix a splash of maple syrup into the pumpkin mousse.
  • These parfaits can be made up to 1 day in advance, but add the crunch layer right before serving to keep it crisp.
  • Swap pecans with walnuts or almonds for variation.
