- 9 lasagna noodles (no-boil or traditional)
- 1 cup pumpkin puree (canned or homemade)
- 4 cups fresh spinach
- 15 oz ricotta cheese (whole milk)
- 2 cups mozzarella cheese (shredded)
- ½ cup Parmesan cheese (grated)
- 2 cloves garlic (minced)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). If using traditional noodles, boil according to package instructions until al dente.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach and cook until wilted, about 2-3 minutes.
- In a mixing bowl, combine ricotta cheese, sautéed spinach, Italian seasoning, salt, and pepper; mix well.
- In a baking dish, layer pumpkin puree at the bottom. Add noodles followed by half of the ricotta mixture and some mozzarella cheese. Repeat layers until ingredients are used up.
- Cover with foil and bake for 30 minutes; remove foil and top with remaining mozzarella and Parmesan cheese. Bake uncovered for an additional 15 minutes until golden.
- Allow to rest for 10 minutes before slicing and serving.
