  • 9 lasagna noodles (no-boil or traditional)
  • 1 cup pumpkin puree (canned or homemade)
  • 4 cups fresh spinach
  • 15 oz ricotta cheese (whole milk)
  • 2 cups mozzarella cheese (shredded)
  • ½ cup Parmesan cheese (grated)
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). If using traditional noodles, boil according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach and cook until wilted, about 2-3 minutes.
  3. In a mixing bowl, combine ricotta cheese, sautéed spinach, Italian seasoning, salt, and pepper; mix well.
  4. In a baking dish, layer pumpkin puree at the bottom. Add noodles followed by half of the ricotta mixture and some mozzarella cheese. Repeat layers until ingredients are used up.
  5. Cover with foil and bake for 30 minutes; remove foil and top with remaining mozzarella and Parmesan cheese. Bake uncovered for an additional 15 minutes until golden.
  6. Allow to rest for 10 minutes before slicing and serving.
