  • 4 cloves fresh garlic, minced
  • 2 red bell peppers, sliced thinly
  • 1 cup cherry tomatoes, halved

  • 1/2 cup Kalamata olives, pitted and halved
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the red bell peppers, slicing the onion, and mincing the garlic.
  2. Place chicken breasts at the bottom of the slow cooker. Layer sliced peppers, onions, cherry tomatoes, and olives on top.
  3. Drizzle olive oil over the mixture and sprinkle with oregano, thyme, salt, and pepper.
  4. Cover and cook on low heat for 6 hours or high heat for 3 hours.
  5. Once done, shred the chicken directly in the pot to mix with the juices before serving.
